Gravestones from the 1700s in Coupar Angus

On our way to a drystone repair, we stopped at Bendochy Parish Church in Coupar Angus, to visit some of their incredible gravestones from the 1700s. Just the most beautiful, characterful and intricate carvings. Why did we stop decorating headstones this way?
